1kg Maris Piper Potatoes

3 tbsp Beef Tallow

1 tsp Sea Salt Flakes

Instructions

Peel potatoes and cut into chunks. Boil in salted water for 7-8 minutes until the outsides are soft but centers are firm.

Drain and let them steam dry for 5 minutes. Shake the colander vigorously to rough up the edges—this creates the crispy bits.

Preheat oven to 200°C (400°F). Add the Beef Tallow to your roasting tray and heat in the oven for 5 minutes until smoking hot.

Carefully tip potatoes into the hot fat. Turn them to coat evenly. Roast for 45–50 minutes, turning once halfway through.

Remove when deep golden brown. Sprinkle with sea salt and fresh rosemary immediately while piping hot.

Ingredients

500g halal beef

200ml heavy cream

100g butter

2 cups tomato puree

1 tbsp garam masala

1 tsp turmeric

Cut beef into bite-sized pieces and marinate with spices for 30 minutes.

Heat the Beef Tallow in a wok (Karahi) over high heat. Add the beef and ginger-garlic paste. Fry for 4-5 minutes until the meat changes color and sears.

Remove the lid. The tomato skins should slide right off—discard them. Turn the heat back to high and mash the tomatoes into the meat to form a sauce.

Add your spices (chilli, cumin, salt). Stir-fry vigorously for 5–8 minutes. This is key—cook until the water evaporates and the tallow separates, creating a shiny gravy.

Toss in fresh green chillies and chopped coriander. Give it one last stir and serve piping hot with Naan.
